The fact is that infantry have better stats, cost, and equipment compared to non-noble cavalry of the same tier. Then you consider the hassle of keeping noble cav when their role can easily be replaced by any number of infantry units. Even if you generate less casualties, infantry is so replaceable that it's a none issue.
Aserai master archers are the second best after fians and you can get the noble tree for your 10% cavalry their infantry is meh I guess. Empire has good infantry but their archers don't have much ammunition (30 for palace and 20 for crossbow). So if you value archers more go for aserai, if infantry go for empire.Batannian armor is pretty bad and their best unit is the Faxlman, who is a 2h dps. Hence the infantry charges. Their big-long weapon needs room to work and your infantry will always lose to Vlandian or Empire units straight up. A Elimination Tourney to finally decide the best infantry! I made a tourney with all 15 T5 infantry to finally see which is the best infantry in the game! The initial brackets also compete for best shield infantry, 2-handed infantry, and spear infantry. I never knew how trash some units were, while a couple did surprise me.Archers shred cav in large numbers, especially xbows. Terrain is really good against cav. If able, take a defensive position on the side of a hill, position next to some rocks to protect your flank, or best of all, sit in a dense forest. The ratio of ranged/infantry plays a large part in the effectiveness of your shield wall. In Bannerlord, this sort of thing just cannot be modeled, and therefore the critical weakness of cavalry isn't really represented. Meaning you can pretty much always ram your cavalry teeth first into any wall of infantry and reasonably expect most of them to come trotting out the other side having inflicting major casualties in the process.
