If you're pretty good at avoiding damage (either good at fighting ot avoiding combat) then stamina is better. It lets you explore easier and you can shoot arrows mid-air for longer. You can always eat cooked hearty food for more hearts, but then again you can also cook 1 endura ingredient and recover full stamina as well.
